We’re asking for your help in purchasing our oven, an Italian-made, Erin- and Liz-assembled Bassanina Tubix 420 that will allow us to bake lots more bread for you and for our community.
THE OVEN!
This wood-fired, steam heated wonder of an oven will cost us more than $65,000 when fully installed. But its cost is not what makes it special—any commercial oven is an enormous expense. Our oven, a Bassanina Tubix 420, was carefully chosen over the other contenders because it will allow us to bake our bread with wood-fired heat—a renewable fuel source—while offering the convenience and controls of a modern deck oven.
It’s a marvel, this oven. And once it’s in place, we’ll be equipped to begin the work we set out to do: bake bread for the good people around us.
As we begin, we’ll hold to these commitments:
Donation of at least 20% of our fresh product at all times to families in need, through food pantries and other existing food access programs.
Sourcing our ingredients locally, from our NY-grown and stone-milled organic grains, to the organic butters and sweeteners we use for special treats. By keeping our spending local, we’re playing a role in bolstering the economy of our nearby farming communities, which has a positive impact throughout the larger economy.
Limiting our growth to what’s possible at a human scale, guaranteeing that service to our community remains our focus for the long term.
Baking bread for you has brought us great joy these past few years, and we believe the business model we’re building can thrive with your help.

A note: we are not currently a 501(c)(3) organization, although we are actively investigating starting a non-profit arm to fully realize our food access and bread donation plans. This means donations to Signal Fire are not tax-deductible at this time.
